Dinner for Two - Your monthly email from Chicken Farmers of Canada

It’s February and we all know what that means... Valentine’s Day! Rather than stressing about what to get or where to go, why not surprise that special someone with a romantic home-made dinner? We’ve featured some delicious “Dinner for Two” recipes this month that will not only impress, but are also simple and easy to make without costing a fortune. Butterflied Herb & Lemon Grilled Chicken
 
PREPARATION TIME: 30 MIN COOK TIME: 1 HOUR 45 MIN SERVES 4
 
This recipe serves 4, but that doesn’t mean it can’t be a romantic dinner for two! Combining cilantro with lemon, garlic, rosemary and thyme makes for an unexpected twist on an otherwise classic dish. Bonus - you can enjoy the leftovers for lunch the next day!
 
Ingredients
 
 
         BUTTERFLIED HERB & LEMON
          GRILLED CHICKEN 
  • 1 whole garlic bulb
  • 1 tbsp olive oil
  • 4lb whole chicken - butterflied
  • 1/2 tsp pepper
  • 1/2 cup fresh rosemary 
  • 1/2 cup fresh thyme
  • sliced lemon for garnish
  • parsley for garnish
      HERB & LEMON SAUCE
  • 3/4 cups olive oil
  • 1/3 cup parsley
  • 1/3 cup chopped basil
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped chives
  • zest of one lemon
  • juice of 1/2 a lemon
  • 1/2 tsp salt
  • 1/2 tsp pepper
 
 
Preparation
 
  1. Heat grill on high. Cut the top off the garlic bulb (not the root end). Place the garlic on a piece of aluminum foil, drizzle with olive oil, and close foil around garlic to seal. Place on grill. Close cover of grill and cook for about 20-25 minutes. Remove from grill and allow to cool until able to handle. Squeeze garlic cloves out of bulb into bowl of a processor.
  2. To garlic, add all ingredients for herb and lemon sauce. Process until smooth and reserve.
  3. Place rosemary and thyme under chicken skin. Season chicken with salt and pepper. Place chicken, skin side down on grill. Grill for 5 minutes then turn. Close grill, reduce heat to medium, and continue to grill for 25-30 minutes or until an instant read thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
  4. Remove from grill and place chicken on a cutting board. Allow chicken to rest for 15 minutes. Place on serving dish and drizzle generously with herb and lemon sauce. Garnish with fresh lemon slices and parsley sprigs. Serve.
