For St. Paddy’s Day make Meat and Potatoes the chicken.ca way!

It's Saint Patrick's day on the 17th of March, and what better way to celebrate than by cooking up some Irish-inspired recipes featuring, what else, the potato! The potato has a long, celebrated history with Ireland and is a staple in many of their national dishes. And with March coming in like a lion this year, comfort food classics such as the recipes listed below are exactly the kinds of foods people crave during a cold snap. These recipes aren't just delicious, either - they are quick and easy to make and most importantly, healthy and nutritious.
 
 
Quick Chicken Stew
 
PREPARATION TIME: 20 MIN COOK TIME: 1 HOUR SERVES 10
 
Nothing could be more Irish than a stew of potatoes, carrots and meat. This version features lean chicken breast instead of the standard red meat, for a healthier twist on an Irish classic.
 
Ingredients
 
 
  • 2.2 lb boneless, skinless chicken breasts
  • 4 cups low-sodium chicken broth
  • 1 Tbsp olive oil
  • 1 1/2 cups onion, diced
  • 1 cup celery, sliced (include some leaves)
  • 6 potatoes, medium, peel on
  • 3 cups carrot(s), peeled
  • 1 tsp thyme, dried
  • 1/2 tsp oregano, dried
  • 1/2 tsp black pepper
  • 2 bay leaves
  • 5 Tbsp cornstarch
  • 1/4 cup cold water
  • 1/2 tsp salt
  • 1/2 cup parsley, fresh, chopped, for garnish
 
 
Preparation
 
  1. Heat olive oil in large pot with tight fitting lid. Sauté the onion and celery for a few minutes.
  2. Cut potatoes, carrots and chicken breast into uniform chunks about 1 ½ inches (4 cm) in size and add to pot. Add chicken broth to the pot with the dried thyme, oregano, black pepper and bay leaves and stir. Bring to a boil, cover and simmer with lid on for 45 minutes.
  3. Discard bay leaves. Mix cornstarch with the cold water in a medium size bowl. Stir until well dissolved and cornstarch has no lumps. Add ½ cup (125 mL) of the hot chicken broth from the pot to the cornstarch mixture and stir to dissolve. Add mixture to the stew and mix well to combine. Simmer another 5 minutes or until it thickens.
  4. To serve ladle into bowls. Garnish with parsley.
