It’s time to bid a fond farewell to Summer and welcome the glorious colours and foods of Autumn. This is the time of year when fall harvest fruits and vegetables are most in season, including squash, apples, beets, pears and potatoes. This month we are featuring some of our fall-inspired recipes to kick-off the season. If you live in Ontario, harvest fruits and veg can be bought locally from farmers markets that are not only fresh, but also help to support the famers in your community. Don’t forget to check out Chicken.ca for more great Autumn recipes! | A hearty stew of sweet potato, peas and chicken. Sweet potatoes are readily available this time of year and are chock full of Vitamin A and fibre making them a healthier alternative to its non-sweet tuber cousin. | | - 4 cups sweet potato, peeled and cubed
- 2.5 lb bone-in, skinless chicken thighs
- 2 cups brown mushrooms, fresh, sliced
- 1 cup red onion, diced
- 4 cloves garlic, minced
| | - 1/2 cup dry white wine
- 1/2 tsp rosemary, dried
- 1/4 tsp salt
- 1/4 tsp black pepper, freshly ground
- 1 cup green peas, frozen
- 2 Tbsp parsley, minced, for garnish
| | | - Peel sweet potatoes. Cut in half and then into cubes approximately 2 inches (5 cm) each. Add to the bottom of the crock of slow cooker.
- Top with chicken thighs.
- Slice mushrooms, dice onions and mince garlic. Scatter over chicken and sweet potatoes.
- Pour over white wine and sprinkle with dried rosemary, salt and pepper.
- Cover and cook on LOW 6-8 hours (HIGH 3-4 hours). Thirty minutes before completion scatter over frozen green peas. Cover and continue cooking.
- To serve, place chicken and sweet potatoes on a platter. Scatter with chopped parsley. Pour juices into a dish and serve on the side as au jus.
