It’s only a few weeks before kids will be strapping on their knapsacks and heading back to school. For parents, the new school year usually means trips to the store for school supplies, fall clothes and, of course, figuring out the age-old dilemma of what to pack the kids for lunch. Here’s Chicken.ca to the rescue! This month we are featuring delicious, and more importantly nutritious, lunch ideas for your kids. These budget-friendly recipes are sure to impress even the pickiest of eaters in your family. And don’t forget to check out our New This Month section below. We have just completed filming several new how-to videos and you’re invited to their red-carpet debut! | | We don’t think there’s a kid alive who doesn’t love chicken nuggets and fries! Fast food nuggets and fries, however, tend to be deep-fried and very high in saturated fat and calories, things most parents try and avoid serving their children. Our recipe swaps the deep-frying for a healthier oven-baked version using real chicken breast and vitamin-enriched sweet potatoes. There won’t be any leftovers here! | | - 1 lb boneless, skinless chicken breasts
- 2 Tbsp Dijon mustard
- 2 Tbsp 2% milk
- 1/4 cup breadcrumbs, dry, fine
- 3 Tbsp Romano cheese, finely grated
- 1/4 cup whole wheat flour
| | - 1/2 tsp garlic powder
- 1/2 tsp oregano, dried
- 4 cups sweet potatoe(s), peeled, cut into French fry sticks
- 1/4 cup olive oil
- 1 tsp sweet paprika
- 1 tsp pepper
| | | - Preheat oven to 450°F (230°C). Whisk together the mustard and milk in a shallow dish. Cut each chicken breast into 4 pieces and coat in this mixture.
- In a large, shallow dish mix together the bread crumbs, Romano cheese, flour, garlic and oregano powder. Using a dry hand, scoop and pat the crumbs over the chicken breasts in this second mixture. Place in a glass baking dish sprayed with non-stick vegetable oil. Spread nuggets out so they will be crispy and brown.
- Toss sweet potatoes in a bowl with olive oil, garlic, paprika and black pepper. Bake on a baking sheet sprayed with non-stick vegetable spray. Spread fries out so they will be crispy and brown.
- Bake the chicken and sweet potato fries for 30-45 minutes until crisp, browned and cooked through.
