Celebrate Canada Day with Chicken Farmers of Canada!

Looking for something to do this Canada Day? Come out and celebrate with Chicken Farmers of Canada at the 20th Annual Great Canadian Chicken BBQ, July 1st, in Ottawa, Canada! MPs from across Canada submitted their favourite chicken sandwich recipes and competed for a $10,000 grand prize of a donation to a Food Bank in their riding. The sandwiches were voted on by a panel of highly esteemed sandwich experts and the winning entry will be served during the Canada Day festivities on Parliament Hill. Check out our website at www.chicken.ca for details on our winning recipe! We received a whopping 72 entries this year with some very unique and creative takes on this chicken classic. And to get you in a sandwich state of mind, this month we are featuring recipes from our past Canada Day contest winners. Enjoy! 
 
 
A Taste of Summer Chicken Sandwich
 
PREPARATION TIME: 15 MIN COOK TIME: 20 MIN SERVES 4
 
Winner, 2005. This light and flavourful sandwich, made with a tangy Asian-style marinade and served on a fresh Kaiser bun, is the perfect dinner choice on a warm summer’s eve. Serve with pickled hot peppers for extra zing. Cutting carbs? Lose the bun and serve it with an Asian-inspired salad. 
 
Ingredients
 
 
  • 4 Boneless, skinless chicken breasts
  • 1 tsp Orange zest, grated
  • 1/4 cup Orange juice
  • 3 Green onions, finely chopped
  • 1 Clove of garlic, finely chopped
  • 1 tsp Ginger, freshly grated
  • 1 tsp Soy sauce
  • 1/4 tsp Salt
  • 4 Whole wheat Kaiser rolls
  • Roasted red pepper, thinly sliced,for garnish
  • Red onion, thinly sliced, for garnish
  • Romaine lettuce, for garnish
  • Mayonnaise, for garnish
 
 
Preparation
 
  1. In a bowl, whisk together orange zest and juice, green onions, garlic, ginger, soy sauce and salt.
  2. Add chicken breasts; turn to coat.
  3. Let stand for 10 minutes or cover and refrigerate for up to 8 hours.
  4. Grill on medium heat for approximately 15-20 minutes until a thermometer inserted into the chicken reads 165°F (74°C).
  5. Serve on whole wheat Kaiser buns.
  6. Garnish with roasted red peppers, red onions, lettuce & mayonnaise.

Spencer's Chicken Sandwich
Winner, 2000. This is a chicken sandwich classic! Combining ingredients most of us have on hand such as basil, lemon and garlic, this sandwich is fast and easy to prepare. Served with a pesto mayo that compliments the herbed chicken without overpowering it.
